  1. In a large bowl, mix the chicken (2 lb) with salt (1 ½ tsp), pepper (1 tsp), cumin (1 tsp), onion powder (1 tsp), turmeric (½ tsp), smoked paprika (1 tsp), lime juice (2 limes), and oil (3 Tbsp).

  2. Cover and marinate in the fridge for at least 2 hours (overnight is best).

  3. Thread marinated chicken onto skewers.

  4. Grill over medium-high heat, turning occasionally, until cooked through and slightly charred, about 10–12 minutes.

  5. Let rest for 5 minutes before serving.

Mango Salsa

  1. In a bowl, gently toss all ingredients together.

  2. Let sit for 10–15 minutes to allow flavors to meld.

  3. Serve chilled or at room temperature over the grilled pinchos.
